Umeboshi puree is a Japanese ingredient made from salt plums. You should be able to find it in local asian grocers and organic shops.

INGREDIENTS

  • 2 avocados
  • 1 tablespoon of Umeboshi puree
  • 2 aubergines, cooked
  • 1 tablespoon tahini
  • 2 teaspoons cumin

METHOD

Blend everything together. Serve as a dip with bread, crackers or crudités.
