Great for BBQs and leftovers make a great lunch to take to work! Swap in any beans you prefer for the ones mentioned below, or buy a tin of 3 beans mixed.
- 1 tin flageolet beans, drained
- 1tin adzuki beans, drained
- 1 tin black-eyed beans, drained
- 1 tin kidney beans, drained
- 1 bunch celery, chopped
- spring onion, chopped
- parsley, chopped finely
- white wine vinegar
- seeded mustard
- olive oil
Mix all salad ingredients. Store salad dressing in a separate container and add to salad just before serving.
