This recipe is a slightly modified version of a recipe fromĀ Cross Training Systems.

INGREDIENTS

  • 1 large broccoli florets, roughly chopped
  • 1 medium courgette, sliced
  • 1 tin sweetcorn
  • 1/3 cup spelt wholemeal flour (or coconut flour)
  • 2 garlic cloves, crushed
  • 1 egg
  • 1/2 cup parmesan cheese, shredded or shaved (optional)
  • salt and pepper to taste
  • olive oil

METHOD

Steam the courgette and broccoli until just tender. The courgette will need slightly longer to cook, so give it an extra 4 minutes in the streamer before adding the broccoli. Mash the veg together. Lightly beat the egg and add to the mix with the flour. Season with salt and pepper and mix it all together – it will be slightly runny. Fry the batter in the olive oil for 2-3 minutes per side. Serve hot with mayonnaise or chilli sauce. These are also nice as snacks once they have cooled.
