Delicious, fluffy pancakes, best served with butter and maple syrup and bacon on the side.

INGREDIENTS

  • 1 cup plain flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 3 eggs, separated
  • butter

Toppings:

  • butter and maple syrup
  • lemon juice and cinnamon sugar
  • jam and cream
  • ice cream

Sides:

  • bacon

METHOD

Mix together the dry ingredients. Separate the eggs. Mix the milk and egg yolks into the dry ingredients. Whip the eggs whites until they form stiff peaks. Fold the egg whites into the mixture until the white streaks disappear (don’t mix too much). Melt the butter over a low heat into multiple fry pans (if you have them). Use a soup ladle to  portion each pancake. Keep the pancakes warm as you make the rest by placing them on a warmed plate and covering them with another plate. Serve with butter, maple syrup and bacon or lemon juice and cinnamon sugar.
