This is one of my favourite’s from the Johnson cookbook.

INGREDIENTS

corned beef

  • corned beef
  • 1/2 onion
  • 1 tablespoon vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon mixed spice
  • 1/2 carrot

white sauce

  • milk
  • flour
  • water
  • salt

METHOD

Rinse corned beef and place in a crockpot or slow cooker. Cover with water and add vinegar, spice, sugar and veges. Bring to the boil and simmer for around 1 hour per kilo. Leave the meat in the water until it’s ready to serve. Serve with mashed potato, onion in white sauce, carrots and cabbage, with mustard on the side.
