My alternative to buying Nakd bars – although these are great and definitely easier! I’ve modified this recipe slightly: http://itscookincheap.wordpress.com/2013/04/11/fakd-nakd-cocoa-loco
I’m not a big fan of peanut butter (or the almond paste, which tastes basically the same), so I might leave this out next time.
- 2 tablespoons unsweetened cocoa powder
- 150 grams deseeded dates
- 50 grams raisins
- 100 grams rolled oats
- 20 grams walnuts
- 20 grams almonds
- 1/4 cup water
- 2 tablespoons almond paste (or peanut butter if not paleo)
- vanilla essence (optional)
You really need a food processor for this recipe. I used my hand held blender and nearly burnt out the motor! Basically throw everything in together and whizz it up until roughly blended – it can be a bit chunky still, that’s fine. Then place 2 dessert spoons full of mixture onto a piece of clingwrap, shape into a bar and place under a baking tray or book to flatten.
I’m storing my bars in a sealed container in the cupboard. These make a great high energy snack for walking 🙂
