Good recipe for a cold winter’s day.

INGREDIENTS

  • leek, chopped
  • potato, chopped
  • celery, chopped
  • spring onion, chopped
  • vegetable stock

METHOD

Add chopped vegetables, boiling water and stock to a large pan and boil for at least an hour, or until the vegetables are soft. Blend the soup and serve with cheese on top and warm bread on the side.
