So it’s the second week coming up shortly and this detox all still seems pretty easy 🙂

Day 6

Breakfast
I had a pre-prepared blueberry and raspberry and banana smoothie (made with Almond milk) before yoga this morning
Then scrambled eggs again once I got to work

Lunch
For lunch I had a prawn salad again

Snacks
Eggy muffins

Dinner

I made a soup in the slow cooker the night before and so all I had to do was add the Umeboshi paste (as a stock substitute) and coconut milk. I used the block and mixed this with hot water, but it hindsight I think tinned milk would have mixed in better.

Dessert
I had a little of the smoothie I was pre-making for tomorrow.

Preparing for tomorrow night’s dinner…

Sweet potato cakes
Tonight I mashed together a baked sweet potato (after peeling off the skin and discarding) with some veg I’d roasted a few days earlier including carrots, spring onions, mushrooms and radishes. I then formed little patties and fried them – unfortunately they were still a bit soft, so when I get some coconut flour I will try adding that in, but they did taste nice. I served it with spicy hot sauce.

Day 7

Breakfast
Banana and berry smoothie with almond milk
Poached eggs with spinach, spring onion and leek, served with hot sauce

Lunch
Leek & Cauliflower Soup

Dinner
Sweet potato cakes and Bora Bora balls

Day 8

Breakfast
My last 2 eggy muffins
A strawberry and banana smoothie

Lunch
Mixed salad with grated carrot, sliced leek and red onion with tinned tuna and a vinaigrette made from umeboshi paste, lemon juice, crushed garlic, herbs, salt and pepper and olive oil.

Snacks
A few Bora Bora balls

Dinner
Courgette Spaghetti Bolognese

Day 9

Breakfast
A black coffee & a handful of blueberries
The largest scrambled eggs you’ve ever seen with loads of spinach, mushrooms, leek, spring onions & fresh herbs

Lunch
1 large tin of tuna
1 large salad with gem lettuce, avocado, spring onion, leek, herbs, salt and pepper with a lemon juice & olive oil vinaigrette.

Snacks
Cashews
1 banana
Another black coffee to get me through the last few hours of the work week!

Dinner

This was my first meal out and out of the 20 of so menus we looked at, this was one of the only ok options. It was a nice meal though and there was a gourmet burger place we could have gone too as well.

So I ended up having a whole grilled fish with char grilled veges and a simple green salad with lemon juice.

Day 10

Brunch
I had a lie in so today I had a coffee with almond milk and cooked a large brunch.

Breakfast concasse
Tinned tomatoes with roasted peppers, mushrooms, fried onion & garlic and spices including cayenne pepper, hot paprika, chilli flakes, pepper, salt flakes and nutmeg. After cooking everything for about 10 minutes I made two wells and cracked in 2 eggs to fry. I prefer my eggs well done so I flipped them, but if you prefer your eggs sunny side up you can reduce the heat until done.

Dinner
Courgette spaghetti bolognese

Dessert
1 banana and some walnuts

So, I’ve made it 1/3 of the way through and it’s not been too difficult so far. Saying that, I have spent A LOT of time grocery shopping & cooking – lucky I love cooking so much or I’d be in trouble. I’d suggest convincing a family member or flatmate to do the detox with you and taking turns at cooking, so you get a night off every now and then – let’s see how next week goes…
