A refreshing meal for a hot day.

INGREDIENTS:

  • 2-3 peaches, cut into bite sized pieces
  • 1/2 block fetta, cubed
  • 3 spring onions, chopped
  • rocket sprigs
  • lettuce leaves
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons Olive oil
  • cracked black pepper

METHOD:
Place the lettuce leaves into a salad bowl. Add the peaches, then feta on top. Season with cracked pepper. Mix together the vinegar and mustard, then add the oil. Serve the salad with a little dressing on top.
