Yummy and healthy pizza with loads of spinach and roast pumpkin.

INGREDIENTS

  • 1 pita or naan bread (for pizza base)
  • butternut squash / pumpkin
  • baby spinach leaves
  • tomato paste
  • dried herbs
  • salt and pepper
  • tabasco sauce
  • olive oil

METHOD

Preheat the oven to 180 degrees. Thinly slice the pumkin, sprinkle with oil and roast until crispy. While the pumpkin is roasting prepare the pizza. Spread tomato paste onto the pizza base and sprinkle with tabasco, pepper, salt and dried herbs. Add the pumpkin and pile the spinach leaves high on top. Cook in the oven for 20 minutes or until cooked and the spinach has reduced down.
