I made this delicious roast chicken for dinner last night. Simple to prepare and very tasty.
- free-range chicken
- 1/2 orange
- 1/2 onion
- 1/2 head of garlic
- salt and pepper
- olive oil
- chopped fresh herbs or dried herbs (parsley, time, oregano)
Preheat oven to 200 degrees. Pleace the chicken in a pan and stuff with the orange, onion and garlic (whole and not peeled). Rub salt and pepper into the chicken. Melt the butter slightly and combine with olive oil and herbs. Rub into the chicken. Cover the baking dish in alfoil. Cook chicken for 30 minutes. Turn oven down to 180 degrees and turn the chicken over. Cook for a further 30 minutes. Add the vegetables. Turn again and remove the alfoil. Cook for a final 30 minutes.
