An easy way to get rid of any left-over vegetables.

INGREDIENTS

  • pumpkin
  • carrot
  • potato
  • onion
  • peppers
  • courgette / zucchini
  • any other left-over vegetables
  • salt
  • pepper
  • oil
  • mixed dried herbs
  • lemon or lime juice
  • pinenuts
  • couscous (made with chicken/vegetable stock)

Dressing (optional)

  • natural greek yoghurt
  • lemon juice

METHOD

Roast the seasoned vegetables. Remove from oven and season with lemon or lime juice. Sprinkle with pinenuts and serve warm or cold with couscous and the (optional) dressing on the side.
