Something mum and I just whipped up for tonight’s starters.

INGREDIENTS

  • salmon
  • 1/3 cucumber
  • 1/3 mango
  • lemon juice
  • white vinegar
  • salt and pepper
  • dill, finely chopped
  • olive oil
  • lettuce leaves (optional)

METHOD

Mix together the liquids in a salad bowl with the dill, adding the oil last. Dice the salmon, cucumber and mango into small cubes. Mix in the cucumber, mango and salmon. Serve in a glass lined with a lettuce leaf as entrée to any meal. Alternatively, place smaller portions inside chinese spoons for serving to a larger number of guests.
