A healthy, tasty meal I whipped up tonight. You can try adding thinly sliced celery too.

INGREDIENTS

  • olive oil
  • 1 clove garlic, crushed
  • 1 onion, diced
  • 2 carrots, sliced into thin rounds
  • 5-6 mushrooms, sliced
  • 2 turkey breasts, sliced
  • 400g diced tomatoes
  • parsley, chopped
  • fresh oregano, leaves removed from stem
  • dried herbs
  • peri peri or other spicy sauce
  • Salt and pepper

METHOD

Boil some wholemeal pasta. Place the sliced carrot into a covered bowl in the microwave with a slug of water and cook on high for 5 minutes to soften. Fry the garlic and onion in a little olive oil. Add the turkey and fry until browned. Add the mushrooms and fry lightly. Add the tomatoes, carrots, dried herbs and spicy sauce. Just before you remove the sauce from the heat, add in the fresh herbs and season with salt and pepper. Drain the pasta and serve the sauce over the top with extra pepper.
