INGREDIENTS

  • 4 burger buns, halved
  • 4 lettuce leaves
  • 2 tomatoes, sliced

  • 225g azuki beans
  • 30g cheddar cheese, grated
  • 2 tablespoons of hot mustard
  • parsley, finely chopped
  • a pinch of chilli powder
  • 85g of wholemeal breadcrumbs
  • 1 pinch of salt
  • mayonaisse

METHOD

Preheat the oven 180 degrees. Mix together the beans, beaten eggs, cheese, mustard and parsley. Add the chilli and salt. Add the parsley and breadcrumbs and mix. If it’s too soft, add some more breadcrumbs. Divide in four (using patisserie circles if you have them). Cook the patties on an oven tray for 20-25 minutes. Add your bread roles to the oven for the last 5 minutes to brown. Make the burgers and serve with salad.
