Giant Banana Bread CookiesA tasty recipe I’ve modified slightly from simplyrecipes.com. The cookies are soft and spongy and are a nice way to use up over-ripe bananas. Another option is banana bread.

 

 

INGREDIENTS

  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 3 bananas, mashed
  • 1 teaspoon baking soda
  • pinch salt
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon crushed cloves
  • chocolate chips or nuts (optional)

METHOD

Preheat the oven to 190 degrees and grease two cookie trays with butter.

Mix together the butter with a fork until soft. Add the sugar and mix together until creamy in texture. Add the egg and continue to mix until light and fluffy. Mix in the vanilla essence and set to one side.

Add the baking soda to the mashed banana and mix. Let stand for 2 minutes so the soda and acid from the banana will react and cause the cookies to rise.

In the meantime mix together the flour, salt and spices.

After 2 minutes, mix the banana into the butter mixture and then mix in the dry ingredients (and chocolate chips or nuts if using them) until everything is just mixed.

Spoon the mixture onto the trays leaving space in between for the cookies to expand.

Bake for 15-20 minutes. The cookies should still be a little soft when you remove them – they will harden as they cool.
