This beer can (or drunken) chicken recipe produces a moist chicken with a crackly skin.

INGREDIENTS

  • free range chicken
  • 1 small can of beer (1/2 full)
  • rosemary
  • cayenne pepper
  • paprika
  • dried oregano
  • ground coriander
  • cumin
  • cayenne pepper
  • garlic, whole, unpeeled cloves

METHOD

Preheat oven to 200 degrees.  Drink half the beer. Tin open the top of a small beer can (or wash out an empty soft drink can and use that instead). Add herbs, spices and whole, unpeeled garlic cloves to the can. Baste the chicken with olive oil and butter and salt. Place the tin can in to the chicken and sit it upright in a baking tray. Cook at 200 degrees for 30 minutes and another hour at 180 degrees. Serve with roast veges and nice wine.
