While this soup probably doesn’t sound appetising, it’s very nice. If you don’t have cheese you can add milk or creme fraiche instead, or just eat as is.

INGREDIENTS

  • 600 grams brussels sprouts
  • 30 grams butter
  • 1 onion, diced
  • 6 rashers of bacon, diced
  • 1 potato, cut
  • 1 litre chicken stock
  • Boisson cheese

METHOD

Fry the onion in butter. Add the bacon and fry until done. Add the brussels sprouts, potato and stock. Once done, blend until smooth. Add the cheese and blend again.
