My flatmate made these delicious muffins today. They’d also be great made on wholemeal flour.


  • 2 cups self raising flour
  • 3/4 cups brown sugar
  • 150g frozen blueberries and raspberries
  • 1 cup milk
  • 1/4 cup butter or oil
  • 1 egg


Preheat oven to 190 degrees and grease an 8 portion muffin tin. Combine flour and sugar in a bowl. Add blueberries and raspberries and stir. Add milk, butter/oil, egg and stir until combined, but avoid stirring too much! Scoop mix into muffin tin. Bake for 25 minutes or until skewer removes clean.

Turn onto wire rack to cool a little. Serve warm. Store left-over muffins (if there are any 🙂 in an airtight container.
