A recipe kindly given to me by our local Albanian restaurant. Also check out the spicy fetta dish recipe from the same place.

INGREDIENTS

  • vine leaves
  • 1kg spinach
  • 9 spring onions
  • garlic
  • mint, 1/2 bunch
  • parsley, 1/2 bunch
  • 1/2 cup rice
  • olive oil
  • lemon juice

METHOD

Soak the rice in hot water for 30 minutes. Fry the onions and garlic in olive oil. Add the spinach and stir until done. Remove from the heat and cool. Then add the parsley, mint and lemon juice. Drain the rice and add it to the mixture. Place each vine leaf shiny side down and add filling. Roll the leaf tighly around the mixture. Drizzle with olive oil and serve.
